Cod with herb crust
Ingredients

  • 2 cloves garlic
  • 1 lemon, juice only
  • salt and freshly ground black pepper
  • 4x200g/4x7oz middle fillets of cod
  • 1 sprig tarragon
  • 2 handfuls each of coriander, dill, flat leaf parsley
  • 2 tbsp olive oil
  • 200g/7oz white breadcrumbs, no crusts

Directions

Method
1. Preheat oven temperature to 190C/375F/Gas 5.
2. Place the cod into an ovenproof dish, squeeze over the lemon juice and season with salt and pepper.
3. Mix into crumbs herbs, garlic, bread, and olive oil.
4. When fine crumbs, put on top of the fish and bake in a moderate oven for about 10 minutes. Serve on a plate with a wedge of lemon and a mixed leaf green salad or baked potato.
